What is Chinese Shrimp Omelette?

Chinese Shrimp Omelette is a staple in many Chinese households. It features silky scrambled eggs with succulent shrimp. The eggs are seasoned with sesame oil and soy sauce and the whole dish is finished with green onions. It's a quick and easy recipe that requires little ingredients. I personally love to enjoy this as a main dish with steamed rice and vegetables.

My mother used to regularly cook this dish for us. It was the fastest way to get dinner on the table as we would always have a bag of frozen shrimp in the freezer along with eggs. She would pan fry the omelette so it was more browned. However, I prefer this omelette silky smooth. I hope you enjoy my version of this egg dish.

  • Eggs
  • Jumbo shrimp
  • Green onion
  • Regular soy sauce
  • Sesame oil
  • Cooking oil

How to Make Chinese Shrimp Omelette

  1. In a mixing bowl, crack and beat together the eggs, green onion, soy sauce and sesame oil together until smooth for about 30 seconds.
  2. Then heat oil in a wok or non-stick pan on medium heat. If you’re cooking in a wok, allow the oil to smoke (if you’re not using a wok skip this step).
  3. Next toss in your shrimp and fry until pink and curled. Then lower the heat to LOW setting.
  4. Pour your egg mixture in.
  5. Use a spatula to pull the edges of the omelette inward, continually doing this until your eggs are cooked, silky and glossy. Once cooked, remove off heat and enjoy!

Expert Tips

  • Source quality eggs that are fresh and bright in yolk colour. I like buying the ones with free-run kind with omega 3’s as they have orange yolks.
  • Black tiger shrimp is a fantastic choice for this dish as they're juicier and more plump
  • Buy pre-peeled and deveined shrimp to make things easier
  • Finely slice the scallions and pre-mix this into your egg mixture along with the soy sauce and sesame oil until well combined. We want every ounce of that egg to taste of that savoury flavour.
  • Only fry your shrimp just until curled and slightly pink, about 50%. Do not over cook.
  • Keep your heat low when you pour in your eggs for silky smooth eggs that are not overcooked.

FAQ

Substitutes for sesame oil?

Omit it completely or sub with sesame seeds.

Substitutes for soy sauce?

Feel free to use tamari sauce, coconut aminos, or any gluten-free soy sauce.
