FAQs

What is the best sugar to use for water kefir? ›

Good: Rapadura Sugar

Rapadura (and similarly pressed cane sugars called sucanat or panela) is the least refined sugar. It's produced by pressing the pure juice from the sugar cane, then cooking at low temps to evaporate the water.

How do I know if I killed my water kefir? ›

To find out if your water kefir grains have died, you can test them by making them ferment a new batch. If the grains are dead, the water will remain very sweet and there will be no sign of fermentation. Another sign is the appearance of mould on the surface. Unfortunately, there is nothing you can do if this happens.

How do you make water kefir taste better? ›

Flavouring Water Kefir With Fruit

Fruit can be fresh, frozen, dried, whole, puréed, etc. For maximum flavour, choose ripe fruits and remove any damaged parts. The smaller the pieces of fruit, the larger the contact area with the kefir, and the faster the flavour will spread. Cut or crush your fruits for best results.

What happens if you over ferment water kefir? ›

When water kefir is finished, it tastes a bit sweet still. If you prefer it more sour you can overferment it. If you leave it for a very long time it may become even to sour to drink. The same is with kombucha.

Can you add too much sugar to water kefir? ›

Too much sugar or too many water kefir grains can lead to over fermentation and more alcohol content.

Does water kefir spike insulin? ›

Why is water kefir sometimes ok for diabetics to consume? The bacteria and yeast produce enzymes that break down the sucrose (the double sugar that sugar is composed of) into fructose and glucose. Fructose is digested by the liver and does not spike the blood sugar of diabetics like sucrose or glucose.

What is the mother of water kefir? ›

Water kefir is a live naturally sparkling drink, fermented with a water kefir mother culture, a naturally occurring symbiotic culture of bacterias and yeasts (SCOBY). It is organic, vegan and obviously packed with live cultures, which ensures it has a multitude of health benefits.

What is the white foam on top of water kefir? ›

Kefir is anaerobe and needs no oxygen (as you know from our article selfmade water kefir). Kahm yeast is aerobe and needs oxygen. If you have kahm yeast inside your drink, white bubbles which a lot of people think is mould, build up on the top. Moreover, the drink gets cloudy and smells musty.

Why does my water kefir smell like rotten eggs? ›

If you continue to have cloudy and smelly water kefir, you may have to purchase new grains. It may take longer for the grains to ferment after dormancy but the yeast will stay in check.

Should I stir my water kefir? ›

Before pouring in the fermented water kefir, give it a good stir with a spoon to evenly distribute the probiotics. Then pour it into the bottles, allowing the grains to collect in the strainer. Leave a little airspace at the top of the bottle.

Should I add salt to water kefir? ›

Normally pure white sugar and filtered water is enough for great batches of water kefir. However, if your water lacks minerals and you notice your water kefir is sluggish, you can add a tablespoon of raisins and a pinch of Himalayan salt to your 1L sugar solution.

How much baking soda do I add to water kefir? ›

The ratio of grains to water should be one tablespoon of grains to one cup of water. If adding molasses, you will need 1/2 teaspoon per batch. If using baking soda, use 1/4 teaspoon per batch. If you use too much of the soda, the batch will taste like salt, and it can kill off some of your grains.

What is the disadvantage of water kefir? ›

For most people, water kefir can safely be enjoyed with minimal risk of adverse symptoms. Like other probiotic-rich foods, the most common side effects include digestive issues like bloating, nausea, constipation and cramps ( 13 ). These side effects tend to decrease with continued consumption.

Why are my water kefir grains so tiny? ›

Kefir grains usually stay around the size of a rice krispie to the size of a corn flake, but can be even smaller if they are stressed, reproducing rapidly or too hot (the size of an uncooked rice kernel or candy nerd).

Should water kefir be kept in the dark? ›

For now we still recommend kefir grains be placed in indirect light or dim light (such as in a cupboard) or a cool corner of the kitchen counter.

Is brown sugar OK for water kefir? ›

Water kefir is considered to be a functional food with probiotic characteristics. It can be improved with addition of organic brown sugar and fruits native to Brazil, such as jaboticaba.

Can I use granulated sugar for water kefir? ›

Yes. Water kefir grains have evolved to feed on granulated white sugar and cannot properly ferment without it. Thick sugars like turbinado, sugar in the raw, and brown sugar are too difficult for the Water Kefir grains to break down and process.

Can you use turbinado sugar for water kefir? ›

Heat 1 cup of unchlorinated water and add 1/4 cup of sugar of your choice, then stir to dissolve and let cool. (Turbinado works best. You can also use piloncillo sugar or pure cane sugar. Make sure its PURE cane sugar, because some companies also use beet sugar in it as well.)

How sweet should water kefir be? ›

Taste: After the 48-hour culturing process, the finished kefir should be less sweet than the sugar water you started with. Please note: finished kefir will still be fairly sweet as it does still contain fructose which is naturally very sweet. But it should be at least a bit less sweet than the original sugar water.
