What You’ll Need

Let’s take a look the ingredients you’ll need to make White Chicken Chili Mac. See bottom of post’s recipe card for full instructions.

  • extra virgin olive oil– The olive oil in the recipe is used to saute the vegetables.
  • white onion– I prefer white onion, but yellow or sweet works fine too. Finely chop the onions.
  • garlic– You can mince your own garlic clove or use the already minced garlic that is sold in a jar in the produce department.
  • anaheim chili pepper– Find anaheim peppers in the produce often times near the jalapenos and other peppers. It adds a nice spice to the chili when simmering in the slow cooker.
  • zucchini– Diced zucchini is added to the chili, it can be found in the produce department at the grocery store.
  • bell pepper– I use green bell pepper in my chili, I recommend to finely dice before sauteeing.
  • cooked chicken– In most of my recipes that call for cooked chicken, I use a rotisserie chicken that I shred and keep in the refrigerator for quick use.
  • white beans– Cannellini beans work great here. Find them canned in the canned vegetable section of the grocery store. Drain and rinse before adding to recipe.
  • chicken broth– Use a reduced sodium chicken broth found in the soup section of the grocery store.
  • ranch dressing seasoning packet– Find this in the salad dressing section of the grocery store. Comes in individual packets or a box of 4 usually.

More Ingredients For White Chicken Chili Recipe

  • fresh limes– Fresh limes add to the fresh zest of the chili. Roll onto counter before slicing and squeezing juice to help.
  • ground cumin– Ground cumin in a key ingredient in chili recipes. It adds a smoky flavor that can’t be beat!
  • kosher salt– Kosher salt is a more coarse salt, I use it in all of my cooking and baking.
  • garlic salt– Look for Lawry’s brand if you can find it, it’s a good one.
  • black pepper– Fresh ground black pepper is preferred.
  • small pasta– Small shell pasta or elbow pasta is great in this chili mac.
  • fresh cilantro– Fresh chopped cilantro is the perfect garnish to your white chicken chili. Find it in the produce department of your grocery store. No need to cook it in advance, it will cook in the slow cooker.
  • avocado– Dice an avocado for each serving of chili. It’s a delicious addition.

How To Make White Chicken Chili

White Chili is basically chili that is made with white beans, chicken, mild peppers without the traditional chili powder and tomato base. It can be made creamy as well by adding sour cream or heavy cream to the broth.

2. Transfer To Crockpot. Transfer to a large crock pot over high heat. Add broth, Ranch seasoning, lime juice, cumin, garlic salt, salt, pepper and pasta.

What Type Of Slow Cooker Should I Use?

For soups and chili recipes use a slow cooker that is at least 5 quarts. You’ll find slow cookers of many price points. Take a look online to see your options. It doesn’t have to be a fancy or expensive slow cooker to make great food. I have a number of crock pot/slow cookers of low end and high end. They both work just fine. The more expensive slow cookers will have more heating options which can be convenient, but it’s definitely not necessary if you just need a basic slow cooker. Check Walmart and Target, they’ll have a number available. The KitchenAid Slow Cooker is a great choice for a higher end option.

Can I Use Other Beans In This Chili Recipe?

Since this is a white chicken chili, I use Cannellini beans that keep the traditional “white” chili. You can use other beans such as black, pinto, and kidney beans, but they’re not traditionally used in a white chili.

3. Add Pasta. Add your dry pasta to slow cooker. It will cook right inside the broth. I used a small shell pasta for my chili mac today, but small elbow pasta or even the spiral rotini works great too. Note, you can also leave out the pasta if you want just a regular slow cooker chili.

4. Slow Cook. Close lid and close for 2 hours, until pasta is al dente.

How To Choose a Ripe Avocado at the Store?

If gently press the avocado and it feels just slightly soft, you’ll know it’s ripe and ready-to-eat. Ripe, ready to eat avocados may have a darker color but color can vary so it is best to go by feel as well as color. It will feel lightly soft but it will not feel “mushy” to the touch. Carefully slice the avocado in half, remove the center pit and dice the avocado to add to each bowl of chili.

How To Serve

Serve each bowl of hot chili topped with diced avocado and a pinch of cilantro if desired. It’s also great with a dollop of sour cream and your favorite hot sauce. Shredded cheese and green onion are delicious on top too. Try serving with my Fluffy Mexican Cornbread Recipe too.

How To Store Leftovers

FAQs

What is the difference between chili and white chili? ›

Regular chili has a rich base of red chilies (or chili powder) and sometimes tomato, while white chili calls for green chilies. We use canned Hatch green chilies, white beans, and tender shredded chicken to make our white chili recipe. It tastes quite different from red chili but is just as delicious!

Why is my white chicken chili watery? ›

Adding too much stock, broth, or water.

If your chili looks watery, you may have poured in more than required. Next time, add just a little at a time and increase the liquid as necessary.

Does chili taste better in the crockpot? ›

Technically, no. The beef, bell pepper, onion, and garlic will all cook in the slow cooker, but browning the meat and sautéing the vegetables in a skillet before adding it to the slow cooker brings much more flavor to the chili.

How can I make my white chicken chili less spicy? ›

Add a generous dollop of sour cream, creme fraiche, or yogurt to scorching hot chili or stews, or even a touch of milk or cream. For best results, though, go with full-fat dairy. For tomato sauces and stews that don't want dairy, try shredding some cheese on top. Photo by Meredith.

What does white vinegar do to chili? ›

Good news, it's easier than you think to perk up your pot of chili. All it takes is a splash of vinegar, which I bet you already have in the pantry. Stirred into the pot right before serving, a spoonful of vinegar brightens up the finished product, and gives it that full, rounded taste that was missing.

Is white chili powder the same as white pepper? ›

It is small and very hot with a medium conical shape - a typical white bird chili. This chilli powder is white in colour with a pretty big kick - definitely not to be mistaken with white pepper powder. White chilli powder can be added to any dish for extra spice, and being white, it adds no colour to the dish.

What can I use to thicken up white chicken chili? ›

The good news is there are lots of easy ways to thicken up your chili with ingredients you likely already have in your pantry— flour, cornmeal, pureed beans, cornstarch, or even crushed tortilla chips will help do the job, along with some good old extra simmering time.

What can I use to thicken my white chicken chili? ›

All-purpose flour and cornstarch are useful for thickening chili, as well as sauces, soups, and stews. However, you'll want to avoid adding these ingredients directly to your recipe, as this will result in clumps. Instead, create a slurry and add it slowly to help the thickener fully incorporate.

What can I add to white chicken chili to thicken it? ›

Add 4 oz. of cream cheese (cut into chunks) to the chili and stir until it has melted in. Stir in ½ cup sour cream. To thicken the chili further, smash some of the beans against the side of the pot. The chili will thicken even more as it begins to cool.

What is the secret to really good chili? ›

Only Add Flavorful Liquids

Instead of adding water to your chili, add some more flavor with chicken or beef broth, red wine vinegar, Worcestershire sauce, or even beet or wine. Each one of these options brings out different notes and levels of sweetness that will enhance your culinary creation.

What adds the most flavor to chili? ›

If you want more of a smoky flavor, add cumin, Spanish paprika, ancho chili powder, or a combination. If you are looking for more heat, add cayenne, crushed red pepper, or Hungarian paprika. If it's too spicy add a little brown sugar and some sweet paprika.

Can you overcook chili in a slow cooker? ›

Yes, but it would take a while. I have cooked this chili for 9 hours on low and it was delicious but ever-so-slightly burnt on the top. The tomatoes contain sugar, which caramelizes in the slow cooker, and will eventually burn if it cookes for too long. Anything longer than 10 hours on low is risky.

How do you thicken white chicken chili with cornstarch? ›

Make a cornstarch slurry: Mix together 1 tablespoon each of cornstarch and cold water, stirring well to remove any lumps. Then, stir the slurry into your chili and let it simmer for another 10 minutes to fully thicken.

Should you add sugar to chili? ›

The chili tastes completely different without the brown sugar so if you like a subtle sweetness in your chili then you've just got to go for it! Trust me, it will not make your chili taste like candy. It's all about balance between spicy, smoky, and sweet.

What is the meaning of white chili? ›

White chili is a delicious variation of classic chili, featuring chicken or turkey and white beans in a savory broth base instead of the typical kidney beans and tomato base.

Are white chillies hot? ›

The white variety also has smoky undertones. Measuring in between 100,000 to 350,000 Scoville Heat Units, the White Habanero isn't as hot as its chocolate or red counterparts, but still packs a good punch! The White Habanero starts green, then turns yellow before maturing to an ivory white.

What are the two types of chilli? ›

While too many classifications can confuse, here is a simple way to segregate red chillies based on their color and pungency.
  • Regular chili with medium color, medium pungency.
  • Red hot chili with high color and high pungency.
  • Kashmiri chili with very high color and low pungency.

Which color chilli is hottest? ›

The more capsaicin, the hotter the chili pepper. And this means that of the same variety, red ones are hotter than green chili peppers.
